This means that now the number of tasks in a DAG can change at run time based on the state of the previous tasks.

Depending on use case I'd say. I'm using Figma a lot, but it's not for everything (or Penpot, its F/OSS contender). For digital paint, Krita is nice.
Inkscape has gotten much better, and so has GNU I.M.P, but don't expect a radically fresh new UI/UX if you've used them already.

What do you store in git? Only the text representation, or both text + ipynb? I found that doing (1) loses cell outputs and doing (2) carries all the problems of ipynb to jupytext + synchronization.
